The salads I keep making on repeat this summer

HiReader -

Summer officially arrived this weekend, and if you're anything like me, that means dinner starts looking a little different.

I'm craving meals that feel fresh and satisfying without spending hours in the kitchen or heating up the house. This is the time of year when big salads, pasta salads, and easy lunches are on repeat at Casa de Crews.

My current favorite is this Italian Chopped Salad with Chicken. It's packed with antipasto-inspired flavors like salami, chicken, crisp veggies, and a tangy Italian dressing. Hearty enough for dinner, easy enough for lunch, and one of those salads you'll want on repeat all summer.

more salads to make this summer:

chicken blt salad

Everything you love about a BLT, turned into a satisfying salad with a homemade honey Dijon dressing.

greek orzo salad

A fresh pasta salad that's perfect for cookouts, meal prep, or an easy weeknight side. I love serving it with my Air Fryer Chicken Thighs to make it a complete meal.

street corn salad

One of my favorite summer sides. It's creamy, tangy, and made with Greek yogurt instead of mayo. Serve it with grilled chicken or steak, or scoop it up with tortilla chips for an easy snack.

mediterranean quinoa salad

One of my favorite lunches. It's packed with fresh vegetables, chickpeas, and plenty of flavor while still being completely vegetarian.

sesame noodle salad

Perfect for lunch as-is, but easy to turn into dinner by adding grilled or rotisserie chicken. LOTS of texture and flavor in this one!

homemade caesar dressing

Use it for a classic chicken Caesar, steak Caesar, shrimp Caesar, wraps, or even as a dressing for a pasta salad. It's one of those recipes that earns a permanent spot in the refrigerator all summer long.

Happy Summer,

Nichole

Hi Reader - If dinner has been feeling a little...meh lately, you're not alone. We just got back from a long weekend in Savannah where every meal was so good, and now I'm in that weird post-trip phase where I'm inspired by all the food we ate...but somehow totally uninspired in my own kitchen.
