3 summer recipes I'd make this week


Three easy summer recipes for when you want something good without making dinner a whole production:

Chicken + Zucchini Meatballs: Made in the air fryer or oven, these are super juicy thanks to shredded summer zucchini mixed right into the ground chicken. Serve with whipped feta, a simple salad, or tuck them into a pita.

Pesto Pasta with Chicken Sausage: If you have fresh basil to use up, make a batch of my pesto and turn it into this easy one-pot dinner. Store-bought pesto is also more than fine here!

Cheeseburger Tortilla Wraps: Such a fun, easy summer dinner, and everyone can customize their own with their favorite burger toppings. Use my beef or turkey burger recipe, or grab store-bought patties when you need the shortcut. We’re keeping it easy!
