Hello, friend! Summer is flying by - unless you live in Florida like me, then we've got a while left, but I'm still dreaming of summer meals but craving routine, easy dinner as I start to dream (just a little bit!) about fall...

here are 10 recipes to make this month!

pesto grilled pork chops

Juicy grilled pork chops get topped with a fresh basil pesto sauce and are ready to enjoy in under 30 minutes; this dinner will become your fave summer meal!

salmon fried rice

this is a great way to use leftovers! Leftover rice, and salmon, mixed with cauliflower rice to bulk it up and balance the starch. This comes together in about 20 minutes if you use leftovers.

pork tenderloin tacos

Thinly sliced pork tenderloin, topped with a quick and easy pickled pico de gallo with avocado, make for an easy and flavorful weeknight taco dinner! You could serve as a bowl or with GF/corn tortillas. There are SO flavorful.

chicken zucchini meatballs

made in the air fryer or oven, these are light and make for great meal prep! Serve with your fave side, a pita or pasta!

Boneless, skinless chicken thighs that are tender + juicy! I like to chop for salad or bowls or with a side of mashed cauliflower + side salad.
